Viki's Arugula Salad
Serving Size: 4
Ingredients:
2 tablespoons lemon juice
1 teaspoon dijon mustard
½ cup extra-virgin olive oil
½ teaspoon salt and pepper
4 cups packed arugula or your favorite greens
1 cup cherry tomatoes
¼ cup of Viki's Original Granola
Directions:
• Combine lemon juice and mustard in a large bowl, slowly pour in olive oil, whisking until the mixture has emulsified.
• Season with ½ teaspoon salt and black pepper.
• Toss salad greens and cherry tomatoes with the vinaigrette to coat.
• Sprinkle granola over the top of the salad.
